Hailing from the land of Valpolicella Classica in Sant’Ambrogio are 35 hectares of Zenato vineyards. The grapes here produce Amarone, considered to be one of the areas most valuable wines, and from Amarone comes Ripassa.
To create Ripassa, the pressed and dried Amarone grapes are passed over the still warm marc, which results in a second alcoholic fermentation. This process increases the alcoholic content of the wine, resulting in enhanced richness in colour and flavour.
Of his favourite wine, Peter describes it as, “a well balanced, smooth and silky wine.” And he has an insider’s tip, too, “once decanted it is even more spectacular.”
